Nothing will make a big difference. You’ll hear some people say remove the spare tire, take out the back seat, stuff like that – taking 100 lbs off the car won’t make a noticeable difference in a car that weighs more than two tons. And what would you do if you removed the spare and then had a flat?
If you want a lighter car, buy a Mustang or wait for the Camaro.
EDIT – as I expected, you did get an idiot that thought removing the back seat would be a good idea. You will NEVER notice the difference in performance, and now your 5 seat coupe seats 2. Moron.

How much do you want to remove?
You can start with the stuff you don’t see such as the spare and all the trim pieces in the trunk. If you don’t use the back seat, remove it as well as the 1/4 panel trim, the headliner, the carpeting, etc. This will make the car significantly louder as many of those trim pieces also act as sound dampeners. I also know one guy with a 300C that cut much of the exhaust off after the catalysts and just welded on some mufflers ( the exhaust ended approx. under the front seats ). He shaved off quite a bit of weight there and the car sounds better as well.
